Seared Tuna Loin
A easy to make dish with few ingredients.
Ingredients:
In a large frying pan, heat a film of olive oil until smoking.

Season the tuna lightly with salt and pepper and roll in the crushed coriander.
Sear the tuna quickly until coloured on the outside but still raw on the inside. This should take no more than 2 minutes and turn the tuna frequently to avoid overcooking.
Remove from the pan and allow to cool.
Mix the fresh coriander with the olive oil and lemon juice and pour over the cold tuna loin. Marinate for one hour.
Remove the tuna from the marinade and slice as thinly as possible. Pour over the reserved marinade before serving.
- 400g piece of tuna loin
- Olive oil for cooking
- One tablespoon crushed coriander berries
- Two tablespoons of olive oil whisked with one tablespoon lemon juice
- Small handful of chopped fresh coriander
