Marinated Salmon
This is a healthier alternative to gravlax which uses a lot of salt and sugar.
The salmon cures in a matter of minutes, and is best eaten fairly soon after the marinade is put on so for a picnic, it is best to pack the undressed sliced salmon in your cool box and add the marinade just before your serve it.
Ingredients:
- 400g very fresh organic salmon fillet
- Juice of two limes
- One tablespoon each of chives, parsley and tarragon
- One tablespoon of coarse grain mustard
- A light sprinkle of sea salt and black pepper

Chill the salmon well to make the flesh firm.
Cut the salmon into paper thin slices and arrange on a serving dish, preferably in one layer.
Whisk all the other ingredients together and pour over the salmon.
Leave for 15 minutes to cure.
