Homemade Lemonade
This is so refreshing and full of citrus goodness. It is so much better for the family than the chemically enhanced fizzy substitutes which are sold in the supermarkets.
Ingredients:- Six large unwaxed lemons
- 5 oz of granulated sugar, or 3oz of fructose (fruit sugar)
- Three pints of boiling filtered tap water or bottled spring water
Method:
Pare the zest from the lemons.
Squeeze all the juice from the lemons.
Put the zest, the lemon juice and 6 of the squeezed lemon halves into a big bowl. Make sure that the white pith has been removed from both the lemon zest and the lemon halves - otherwise your lemonade will be too bitter.
Add the sugar.
Pour over the boiling water and stir until the sugar is dissolved.
Cover with a cloth and leave in a cool place for 24 to 48 hours.
Strain the lemonade through a sieve. Don't worry if lots of little lemon bits escape through the sieve - this just adds to the flavour.
Bottle and refrigerate until needed.
The lemonade is delicious served neat, with some ice - but you can dilute it with sparkling water or soda water to produce a lighter drink.
The lemonade does not store well for more than 7 days - but as it is so delicious, it is unlikely it will last longer than that anyway!
