Stuffed Parasol Mushrooms

The Parasol mushroom is among the best edible fungi.
It is also very distinctive and easily visible from afar due to it's size and preference of open spaces.  They are readily available from the end of June to November.  Last week whilst I was walking over the cliffs I noticed that the Parasols were breaking free and opening up like an umbrella.

Choose young cup-shaped specimens and discard the stems.  Remove the stalks and wipe the caps clean.  It is best to use the mushrooms within 24hrs of picking.  They are delicious to eat, like mushrooms on their own but alternatively they can be stuffed to make a cheap filling meal.   I like to stuff mine with couscous, chopped cherry tomatoes, some garlic and then topped with Gruyere cheese.  They can also be stuffed with mince or sausage meat or whatever takes your fancy.
